Effect of extraction methods on the niacin content in some fresh and processed mushrooms

AbstractEdible mushrooms are characterized by a specific structure of their cell wall; therefore, methods of extraction used for plat material are insufficient when applied for mushrooms. In this work the effectiveness of niacin extraction was evaluated in terms of fresh, frozen, and dried pilei of Pleurotus ostreatus and Lactarius deliciosus mushrooms. The method used was alkaline hydrolysis suggested by Juraja et al. (2003), which has been modified using sonification as a support. It has been proved that application of ultrasounds as an additional stage during extraction of vitamin B3 form the Pleurotus ostreatus and Lactarius deliciosus mushrooms enhances its accessibility of 23-35% and 24-39%, respectively.
