Effect of morphological type and period of harvest on antioxidant properties of fresh and dried parsley lamina

AbstractThe study focused on the effect of the period of harvest on the antioxidant properties of two cultivars of parsley (Festival cv., with flat lamina and Astra cv., with curly lamina), both fresh and dried by convection drying and freeze-drying. Astra cv. was characterized by a higher content of vitamin C, polyphenols and antioxidant activity levels than Festival cv. Leaves harvested in the summer (I) were richer in both vitamin C, polyphenols and also were characterized by a higher antioxidant activity than the leaves harvested in the autumn (II). Convection drying resulted in a decrease, with regarding to the fresh material, the contents of all the analyzed parameters: vitamin C by 75%, polyphenols by 30%. The antioxidant activity decreased by 52%. Much less damage was observed for freeze-drying and they were: 6% for vitamin C, 8% for total polyphenols and 9% for antioxidant activity.
