Quality changes in lettuce heads stored in a controlled atmosphere. I. Activity of nitrate and nitrite reductase, content of nitrates and other compounds

Abstract

Harvested lettuce heads of two cultivars (Oresto and Prado) grown in a plastic foil tunnel were stored in storage chambers with various composition of gas atmosphere (CO2:O2) at 1°C for 21 days. The activity of enzymes responsible for nitrate reduction, nitrate, and dry matter content decreased during storage. The content of soluble sugars and free amino acids increased considerably. The above changes were mainly due to the temperature factor and gas atmosphere composition in the storage chambers, depending to a lesser degree on the lettuce cultivar.
