Complexes of lupine (Lupinus luteus L.) proteins with anionic polysaccharides

Abstract

An attempt was made to obtain protein-polysaccharide complexes from lupine protein isolate and xanthan gum as well as low methylated pectin. Electrocomplexes were analyzed in terms of proximate composition and selected functional properties. The current flow durring the process of electrosynthesis, yield of the process and product,s structure dependend on both the kind of the polysaccharide applied and the ratio of constituents in initial mixture.
