Abstract

In 4 tubers of very early varieties of potatoes (Aster, Drop, Malwa, cultivated in the years 1991-1993 in the Experimental Station of Varierties Appraisal at Wqgrzce near Cracow, the content of some selected nutritive nitrogen compounds (total nitrogen, protein nitrogen, amide nitrogen, amino acid nitrogen, amino acids) were determined and some toxic ones (nitrates, nitrites, glycoalkaloids) as well as the nitrite reductase activity with respect to harvest time. Potatoes were harvested at: 60, 70, 80 and 120 days of vegetation. The tested potatoes were characterized by medium level of total nitrogen (1.38% d.m.) and high level of protein nitrogen (1.07% d.m.). The content of amino acids dependend on variety and term of harvest, being highest in the tubers of Orlik variety in those harvested in the 2nd term. The content of the folloing toxic compounds: nitrates (320 mg/kg), nitrites (035 mg/kg) and glycoalkaloids (3,4 mg/100 g) in the fresh mass of tubers were found to be dependent on year and term of harvest. The nitrate reductase activity was highest in the tubers of Aster variety. In the tubers of all studied varieties its activity was found to decrease with their growth and a correlation was observed between the nitrate reductase activity and levels of nitrites, amino acid nitrogen and amidic nitrogen. A statistically significant correlation was found between the level of nitrites and those of amino acid nitrogen, aspartic acid and glutamic acid. The content of glycoalkaloids was correlated with total nitrogen, amidic nitrogen, aspartic acid and glutamic acid. The content of nitrogen compounds can be an important criterion of nutritional and toxicological estimation of nutritive value of plan origin substances.
